Ideal for recipes where the emulsification properties of egg yolk are required e.g. mayonnaise, ice cream, hollandaise sauce and custards. It can also be used as a thickening agent in sweet or savoury sauces.
What is egg yolk powder?
Egg yolk powder is made of spray dried pasteurised egg yolks. It is rich in lecithin and a good emulsifier.
How do I reconstitute the egg yolk ?
To reconstitute mix 1 tsp of powder with 2 tsp of water for 1 egg yolk. Reconstituted egg yolks should be used immediately or refrigerated and used that day.
Where is it used ?
Can be used in making sweet dough, cake mixes, egg noodles, ice cream, etc. Egg Yolk Powder is often used In Rich American-Pistachio Aioli and Tastes Great With Seafood, Japanese (Kewpie-Style) Mayo & Aïoli
